To enter leave a comment on this post telling me your favorite thing to do with avocados besides guacamole. My very good friend might have an avocado tree that might be in bloom, and she might be the giving sort of person, and so I might have a few dozen (ok, more like 7 or 8) avocados ripening in my kitchen that are going to need a very permanent place in my belly sometime very soon. I like making chicken tortilla soup (or leave the chicken out for a veggie option) loaded with black beans, corn and zucchini, and add lots of chopped avos (tossed in lime juice) just before eating.

I eat avocado just about everyday, on my wrap sandwich for lunch. But I also love using it in a frittata with smoked salmon and goat cheese.

ReplyDeleteA grilled cheese with havarti, jalapeños, and slices (not mashed) of avocado. As well, I blend a good dollop of olive oil and lemon juice into my guacamole recipe, enough to make it smooth and runny, and it makes a great dressing for taco salad.

Creamy avocado dressing! Can put over a salad, in a wrap, in a burger, use as a dip for shrimp cocktail, the possibilities are endless.

Avocados are good sliced up and put on a sandwich, although it has to be the right sandwich--I had some on a turkey burger once and it was quite good, and also on several different vegetarian sandwiches!
